No-bake Walnut Cookies

DRY INGREDIENTS

  •  1 cup almond flour

  • 1 cup unsweetened desiccated coconut

  • 1 cup walnuts, roughly chopped

  • 2 + ½ TBSP unsweetened cacao powder

  • 2 TBSP flaxseed meal

  • 1/3 cup monk fruit sweetener or coconut sugar

WET INGREDIENTS

  • 3/4 cup almond butter or natural peanut butter

  • 1/4 cup + 2 TBSP coconut oil

  • 1 TSP vanilla essence

CHOCOLATE GLAZE

  • 1/2 cup chocolate chips of choice, I use sugar-free

  • 1/3 cup coconut cream, thick part from top of can

  • 2-4 drops Stevia Liquid optional, adjust regarding desired sweetness

DECORATION

  • 12 walnuts halved

METHOD

  1. Line parchment paper on one or two plates. Make sure the plates fit in your freezer as you must freeze these cookies to set.

  2. In a large mixing bowl, add all the dry ingredients EXCEPT the monk fruit sweetener or coconut sugar.

  3. Stir to combine. Set aside.

  4. In a small pot, on low heat, combine the nut butter, coconut oil, vanilla, and sweetener, stirring until combine.

  5. Stir in the nut butter mixture to the dry ingredients. Make sure the liquid covers all the dry ingredients, the batter will be quite wet and that's what you want.

  6. Scoop out some cookie dough onto the prepared plate covered with parchment paper. You should be able to divide the batter into 12 large cookies.

  7. Spread the dough with the back of a spoon to form a cookie shape.

  8. Freeze for 20 minutes, until the cookies are hard. Meanwhile, prepare the chocolate glaze.

 

CHOCOLATE GLAZE

  1. In a small pot, on low heat, combine the chocolate chips, coconut cream, and stevia drops.

  2. Remove the cookies from the freezer.

  3. Scoop out some chocolate glaze in the middle of each cookie and spread with the back of the spoon. Repeat for each cookie. Add walnut halves in the centre.

  4. Return to the freezer for 2-3 minutes to set.

  5. Enjoy your no-bake cookies!
