Chocolate Peppermint Cookies

Who else loves the combo of chocolate and peppermint?

These Chocolate Peppermint Cookies are soft, chewy and all of the things a great cookie should be.

Now, the thing with "healthy treats" is they are not a nutritious food that should be a staple for anyone. What I find with my clients, is most of them are addicted to sugar loaded, highly processed and packaged foods. These are often the hardest things for them to change their habits around. So giving them alternative options they can create that are better than the store bought option, is one small step in the right direction.

The trick is to make changes so small you barely notice they’ve shifted your life!

INGREDIENTS

  • 1 cup almond butter

  • 1/4 cup unsweetened cacao powder

  • 2 eggs

  • 1 tsp baking soda

  • 1 tsp peppermint extract

  • 3/4 monk fruit sweetener or coconut sugar

  • Pinch of salt

  • 1/2 cup sugar free chocolate chips

METHOD

  1. Preheat your oven to 180 C

  2. In a medium sized bowl, whisk together the almond butter, monk fruit sweetener or coconut sugar, eggs and peppermint extract, making sure to break up all of the lumps from the almond butter

  3. Add in cacao powder, baking soda and salt and stir until fully incorporated

  4. Fold in chocolate chips and mix well

  5. Line a baking sheet with parchment paper. Scoop out 2 tbsp worth of dough onto the baking sheet, placing them about 1″ apart from one another

  6. Bake the cookies for 10 minutes

  7. Remove from oven and give the pan 2 taps on the counter to flatten. Let the cookies cool for at least 10 minutes
