Chocolate Coconut and Oat Slice
This Chocolate Coconut and Oat Slice is a delicious, very easy to make, energy packed treat or snack. Sure to become the next lunchbox favourite in your little ones packed lunch and yours too.
When looking for snack recipes you want something that is full of nutritious ingredients that will provide you with energy. Another big thing to check for is how much sugar your snacks have in them. We want to avoid spiking our blood sugar too high, because what goes up, must come down. If we consume sugar loaded snacks throughout the day, we will experience a lull in energy soon after eating them - remember increased energy is the aim from snacking, not crashing and feeling like you need yet another snack or caffeine to pick you back up.
BASE INGREDIENTS
150g grass-fed organic butter
1/4 cup raw cacao
1 cup wholemeal spelt flour
1 cup rolled oats
1 cup desiccated coconut
1/4 cup maple syrup, rice malt syrup or honey
ICING INGREDIENTS
1/4 cup raw cacao
2 TBSP coconut oil
2 TBSP maple syrup
1 TBSP almond or coconut milk
2 TBSP desiccated coconut (for topping)
METHOD
Preheat oven to 180C (fan forced).
In a large pot over medium heat, melt butter (or coconut oil).
Turn off the heat and add the sweetener, mixing to combine.
Add all of the other base ingredients and mix well until combined.
Press firmly into a lined tin and bake for 10-12 minutes. Take care not to overcook this as it can dry out. If your oven runs hot, reduce the temperature to 160C.
Once cooled, pop it into the fridge to chill for 30 minutes or more.
Make the icing by beating all of the ingredients together in a small bowl until smooth and creamy.
Spread over the chilled slice and sprinkle over a little extra desiccated (or shredded) coconut.
Chill for 10 more minutes in the freezer, remove from the tin and carefully slice into squares by pressing straight down with a large sharp knife.
