Almond & Oatmeal Cookies
INGREDIENTS
1 cup of rolled oats (pulsed in a blender for 30 seconds)
¾ cup almond butter
1⁄2 cup monk fruit sweetener or coconut sugar
¼ cup coconut oil or melted grass-fed butter
2 eggs
1 TSP vanilla essence (no added sugar)
1⁄2 TSP baking soda
¼ TSP Celtic sea salt
⅓ cup sugar-free chocolate chips
METHOD
Preheat the oven to 180 C
In a large bowl, whisk the eggs and stir in the almond butter, sweetener or sugar, vanilla and coconut oil or butter. Whisk together until smooth, making sure to break up any chunks.
Add in the oats, baking soda,celtic salt and chocolate chips and mix together.
Line 2 large baking sheets with parchment paper. Scoop out 2 TBSP of batter onto the baking sheet and spread them apart from one another, then roll them with your hands and flatten them into cookies. I got 10 large cookies.
Bake for 10 minutes. Remove from the oven and tap the pan gently on the countertop a few times to flatten. Let them cool and enjoy!
