Cherry & Raspberry Ripe Slice

Ingredients

  • 1 +½ cup frozen raspberries

  • 1 cup dried tart cherries

  • ½ cup (100g) coconut cream

  • 2 TBSP coconut oil

  • 2 cups flakes, shredded or desiccated coconut

  • 4-6 TBSP monk fruit sweetened maple syrup (depending how sweet you like stuff)

  • 150g sugar-free chocolate or dark chocolate

Method

  1. Add all ingredients but the chocolate to a food processor and blend until it’s well mixed. It’s okay if a few of the cherries aren’t chopped up. Stop and scrape down the sides and keep blending if needed.

  2. Flatten the mixture into a glass container, pressing firmly down.

  3. Melt the dark chocolate and layer it onto the coconut mixture.

  4. Place in the freezer for at least 1 hour before cutting into squares.

  5. Store in the freezer and enjoy!
