Vanilla Caramel Protein Pancakes

These protein pancakes are easy to make and have no refined grains, no refined sugar, and pack a great nutritional punch with oats, banana, eggs, hemp seeds and loads of healthy proteins. 

I use ATP science NoWay Vanilla Caramel Protein. NOWAY is a hydrolysed collagen protein. As we age, collagen declines progressively. Collagen is a very important protein that makes up our connective tissues, ligaments, tendons, fascia, gut wall, scalp, dermis, nail beds, joints and so much more.

I like to make a batch of these at the start of the week for a nutritious, protein filled snack. If I prepare something like these for a snack during the week, I am less likely to settle for sugar filled junk. 

INGREDIENTS

  • 1 cup oats

  • 1 banana

  • 2 eggs

  • 1/2 cup egg whites

  • 4 teaspoons of baking powder

  • a pinch of salt

  • a pinch of cinnamon

  • 2 scoops of protein powder

  • 2 tablespoons of hemp seeds

  • Grass-fed butter to cook

  • *Choc chips, blueberries or any other toppings

METHOD

  1. Blend everything in a blender on a medium low speed until very well mixed (about 1-2 minutes).

  2.  Heat some butter (grass-fed) in a nonstick griddle on medium high heat. 

  3. Add batter in small circles – about 1/4 cup per pancake. 

  4. *Sprinkle with blueberries or chocolate chips if you want. When the edges start to look dry (2-3 minutes), flip and cook another minute or two on the other side.

  5. Top with anything you like! I like syrup.

  6. Enjoy!
