Chocolate Gooey Caramel Cookies

I was obsessed with Arnott's Chocolate Caramel Crown Biscuits, the combination of a delicious gooey caramel topping with chocolate is just heaven to me. So, when I stumbled upon a health version, I just had to make them, and eat a few hehe. They are ideal for a snack on the go and go perfectly with a cup of tea or coffee.

Cookie ingredients:

  • 1 cup almond meal

  • 1/4 cup cacao powder

  • 1 TBSP chocolate protein powder

  • 2 TBSP coconut oil, melted

  • 2 TBSP almond milk

  • 1/4 cup coconut sugar

    Caramel layer:

  • 3 TBSP smooth peanut butter

  • 2 TBSP salted caramel protein

  • 2 TBSP almond milk

    Chocolate layer:

  • 80g dark chocolate

  • 2 TBSP coconut oil

  • 1 TBSP chocolate protein powder

Method:

  1. Preheat oven to 180C

  2. Combine all biscuit ingredients until a crumbly dough forms

  3. Form dough into flat circular cookies and place on baking paper

  4. Bake for 12-15min and allow to cool completely (biscuits will harden once completely cooled)

  5. Mix caramel layer ingredients until smooth paste forms

  6. Spread caramel paste over cooked cookies and freeze for 30min or until slightly firm

  7. Chocolate layer: melt chocolate and coconut oil in microwave in 30s intervals (stirring between intervals)

  8. Add protein to chocolate and whisk until smooth

  9. Dip caramel cookies into chocolate and freeze for 10min or until firm
    Makes 12 cookies
