Crispy Cereal Bars

Ingredients

  • 1 cup peanut butter or almond butter

  • 3 cups puffed brown rice

  • 1/4 cup shredded coconut

  • 1/4 cup pepita seeds

  • 1/3 cup maple syrup

  • 1/4 tsp salt

  • 1/2 cup dark chocolate chips

Method

  1. In a food processor, grind the puffed brown rice until it resembles a sandy texture with a few chunks.

  2. Add the coconut, pepita seeds, nut butter, maple syrup and salt. Process to form a sticky clumpy mixture.

  3. Press into a loaf pan lined with parchment paper.

  4. Freeze for 2 hours.

  5. Remove from the pan and slice into bars.

  6. Melt the dark chocolate chips.

  7. Drizzle each bar with chocolate.

  8. Refrigerate or freeze until the chocolate is set.
