Crispy Cereal Bars
Ingredients
1 cup peanut butter or almond butter
3 cups puffed brown rice
1/4 cup shredded coconut
1/4 cup pepita seeds
1/3 cup maple syrup
1/4 tsp salt
1/2 cup dark chocolate chips
Method
In a food processor, grind the puffed brown rice until it resembles a sandy texture with a few chunks.
Add the coconut, pepita seeds, nut butter, maple syrup and salt. Process to form a sticky clumpy mixture.
Press into a loaf pan lined with parchment paper.
Freeze for 2 hours.
Remove from the pan and slice into bars.
Melt the dark chocolate chips.
Drizzle each bar with chocolate.
Refrigerate or freeze until the chocolate is set.
