Sticky Oat and Coconut Slice

Kids and adults alike love muesli bars as a snack, although store brought muesli bars generally lack any nutrients and can be made with nasty ingredients, so I’ve created this delicious healthified version to share with you all.

This sweet snack ticks all of the boxes; slow released energy, packed full of nutrients, kid approved and made from 100% real foods! Yummy snack options like this Sticky Oat and Coconut slice are ideal to have on hand when the sweet cravings roll through in the afternoon.

Ingredients

  • 1 cup of rolled oats

  • 1/3 cup of oat flour (oats finely ground or replace with more buckwheat flour)

  • 1/2 cup of buckwheat flour

  • 1 scoop (30g) of salter caramel protein

  • 1 cup of shredded coconut

  • 1/2 cup of coconut sugar

  • 2 + 1/2 TBSP of maple syrup

  • 1 TBSP of chia seeds

  • 100g of grass-fed butter

  • 1 TBSP of water

  • 1/2 TSP of celtic sea salt

  • 1 TSP of vanilla extract

  • 40-50g of dark chocolate chips

Method

  1. Preheat oven to 175C

  2. Line a 20cm pan with parchment paper

  3. Put all dry ingredients in a bowl and mix until well combined

  4. Put all wet ingredients in a bowl and mix until well combined

  5. Add wet ingredients to dry ingredients and mix until a sticky dough forms

  6. Smooth the dough into the prepared pan, pushing down and rolling with a cup so the mixture is firmly packed into the pan

  7. Bake for 12-15 minutes (mixture will firm up and become chewy once completely cooled

  8. Enjoy :)
