Fudgy Banana Chocolate Chip Muffins
Who else loves a recipe that only uses 1 bowl?!
Not only are these made in 1 bowl, they are also packed with wholesome ingredients like almond flour, cacao powder, bananas, oats and more!
Perfect for a mid morning snack or a satisfying dessert for all my fellow chocolate lovers.
Ingredients
2 medium-size ripe bananas
1 egg
1 + ½ TSP baking soda
1/2 cup coconut sugar
3 TBSP maple syrup
1/4 cup unhulled tahini
1/4 TSP sea salt
1/2 TSP pure vanilla extract
2 TBSP melted coconut oil
1/2 cup cacao powder
3/4 cup rolled oats
1 + 1/4 cup almond meal
1/4 cup dark chocolate chips
Method:
Preheat oven to 175 degrees C and line a standard muffin tin with paper muffin cases (12)
To a large mixing bowl add banana and egg, then mash to combine
Add baking soda, coconut sugar, maple syrup, tahini, sea salt, vanilla, and coconut oil and whisk vigorously to combine. Then add cocoa powder and whisk again to combine.
Add oats and stir to combine. Then add almond flour a little at a time and stir to combine.
Lastly, add chocolate chips and stir to combine.
Divide batter between muffin tins, filling almost all the way to the top.
Bake on the centre rack for 20-25 minutes or until risen. When cooked, a toothpick inserted into the centre will come out clean.
