Zucchini, Spinach and Bacon Quiche

The humble and delicious quiche has got to be one of the most popular dishes ever! It ticks so many boxes! It's cheap, quick, easy and everyone loves it! 

This recipe makes a great easy dinner and is a wonderful work or school lunch option packed full of nutrients.

Try meal prepping this recipe on a Sunday night for a week's worth of energy packed breakfasts! I try to make this or a similar version every week to have for my breakfast the week ahead - it takes the stress out of contemplating what to eat in the morning! 

INSTRUCTIONS

  1. Preheat the oven to the grill element at 200C

  2. Prepare a baking dish with parchment paper

  3. Cook bacon rashers in the oven on grill for 5-6 minutes. Once cooked, set aside to cool

  4. Change the oven settings to 170 degrees - fan-forced

  5. Whisk eggs in a large bowl. 

  6. Add spinach, zucchini, chopped bacon, cheddar cheese and milk. Stir to combine.

  7. Roll puff pastry out to larger than the size of your baking dish. Press pastry into the dish, folding over, stretch until it fits, trimming if desired.  

  8. Pour mixture into the prepared baking dish and top with grated parmesan. 

  9. Cook in the oven for 35-45 minutes or until the top is golden brown. 

  10. Enjoy!

INGREDIENTS

  • 6 organic eggs

  • 1 1/2 cups of spinach 

  • 1 cup grated zucchini

  • 4 rashers of nitrate free bacon

  • 1/4 cup grated cheddar cheese

  • 4 TBSP milk of choice

  • 1 puff pastry sheet

  • Celtic sea salt and pepper to taste

  • Grated parmesan cheese to top
