Peanut butter caramel bars

One of my OG recipes (Raw Caramel Slice) with a bit of a twist - a peanut butter twist. By far my most popular recipe - brother approved, boyfriend approved and friend approved, so this one sure does get the big tick of approval.  

These are very decadent and rich, so perfect if you're craving something sweet. They are also no-bake, quick, easy, paleo, vegan and damn right delicious!

Peanut base ingredients

  • 1/4 cup pecans

  • 1/4 cup peanut butter

  • 1/4 cup cacao powder

  • 1 cup coconut flakes 

  • 1/4 cup maple syrup

  • 1/4 cup melted coconut oil

Caramel ingredients

  • 1/4 cup almond butter

  • 1/4 cup unhulled tahini 

  • 3 TBSP melted coconut oil

  • 1/2 cup maple syrup

Chocolate layer ingredients

  • 100 grams of 90% dark chocolate

  • 1 TBSP coconut oil

Method

  1. For the base, add all ingredients to a food processor and pulse together until a dough forms. 

  2. Line desired pan with parchment paper. Firmly press the mixture into the pan and roll a flat glass along it pressing down to even out.

  3. Place in the freezer.

  4. To make the caramel, combine all the ingredients in a food processor.

  5. Pour the caramel mixture over the base and freeze for a minimum of one hour.

  6. Melt the coconut oil and chocolate together until smooth, Pour over the caramel layer and place back in the freezer until set.
