Choc Chip Banana Bread (grain free, dairy free and refined sugar free)
This banana bread is sweet enough to have as dessert and healthy enough to have for breakfast! Especially straight out of the oven and slathered in butter (real butter of course).
Many years ago, before I knew anything about health and nutrition, I would pass this café on the way to work and buy a slice of banana bread every morning for breakfast. I thought it was a fairly healthy breakfast option, after all I was getting my fruit in, right?! Wrong! Traditional banana bread is made with refined sugars and processed flours, while your body can tolerate small amounts of these, it’s not something you should be consuming regularly.
Hiding nutrients inside delicious foods is not as hard as you may think, and I love to inspire others to uncover how they can integrate wholesome foods into everyday recipes to make dishes that are mouthwateringly delicious AND healthy.

DRY INGREDIENTS
2 cups almond meal
1/2 cup buckwheat flour
1/3 cup of coconut sugar
1 TSP baking soda
Pinch of sea salt
1 TSP ground cinnamon
1/2 cup of dark (80% cacao) chocolate chips plus more to sprinkle on top
WET INGREDIENTS
2 large eggs
3 medium bananas
1/2 cup unsweetened almond milk
1 TSP vanilla extract
2 TBSP maple syrup
1/4 cup melted coconut oil
METHOD
Preheat oven to 180ºC and line a bread pan with baking paper. Set aside.
Place the bananas (with peels still on) in the oven for 10-15 minutes until fragrant and dark brown. Remove from oven and set aside to cool.
Mix dry ingredients (except chocolate chips) together in a bowl.
In a separate mixing bowl, mash the 3 roasted bananas with a fork (or alternatively you can place them in a blender to get extra smooth).
Then, mix in the rest of the wet ingredients.
Slowly add dry ingredients to wet. Fold chocolate chips into batter and mix again.
Pour batter into the prepared bread pan, sprinkle a few choc chips on top, and bake for 45-50 minutes.
Remove banana bread from the oven and let cool for 5 minutes.
