Mushroom Spinach Quiche

What food do you start your day with? Most people reach for an easy breakfast option such as cereal or toast because let's be honest, nobody has time to cook in the morning.
I'm a big believer that what we eat in the morning sets our tone for the day. If you reach for a sugar-loaded, high carbohydrate breakfast you will spike your blood sugar levels. As the saying goes, what goes up, must come down, this means your blood sugar crashes from the rise in insulin, and you either have a hypoglycemic episode and/or become extremely hungry again by mid-morning and then eat more, generally, more sugary, high carbohydrate foods as that is what your body will be craving.
A great way to save time and make sure you and your loved ones are getting a good start to the day is to prepare something healthy in advance that you can easily heat up or dish up in minutes. This quiche recipe is simple, easy and full of nutrients. I simply heat a slice up in the morning and add a side of avocado or sourdough bread.
INGREDIENTS
9 eggs
1/4 cup milk
1 TBS grass fed butter
5 rashers of natural bacon (nitrate-free)
1 cup button mushrooms
1 red capsicum diced
4 cups of baby spinach
1/3 cup grated mozzarella cheese
salt and pepper to taste
METHOD
Preheat oven to the grill element
Prepare a baking dish with parchment paper
Cook bacon rashers in the oven on grill for 5-6 minutes. Once cooked, set aside to cool
Change the oven settings to 170 degrees - fan-forced
In a large frying pan, sauté the mushrooms and capsicum in butter. This will take 3-4 minutes
Add washed baby spinach to the frying pan until it welts. Turn off the heat and set aside
Whisk eggs in a large bowl. Add milk and grated cheese
Combine egg mixture, vegetables, and sliced bacon rashers
Pour mixture into the prepared baking dish and cook in the oven for 30-40 minutes or until the top is golden brown
