Protein Hedgehog Slice
Sometimes all you need is a clean, crunchy hedgehog slice (drool emoji).
Made with peanut butter, gluten free cereal, coconut, chickpeas, buckwheat puffs... what's not to love?? This recipe is super easy to make and can be adjusted to include extra nuts, seeds or different cereals.
BASE INGREDIENTS
1/2 can chickpeas, rinsed and drained
2 + 1/2 TBSP smooth peanut butter
3 TBSP maple syrup
1/2 TBSP almond milk
1 TBSP coconut cream (thick white part only from top of can)
1 TBSP coconut oil
1 cup shredded coconut
2 TBSP cacao powder
4 TBSP coconut flour
4 TBSP chocolate protein powder
1/4 cup puffed buckwheat
1/4 cup gluten free cereal
CHOCOLATE LAYER INGREDIENTS
100 grams of 90% dark chocolate
1 TBSP coconut oil
METHOD
Blend chickpeas, peanut butter, maple syrup, almond milk, coconut cream and coconut oil until smooth.
Add coconut flour, protein powder, shredded coconut and cacao powder and mix until a thick dough forms.
Gently fold through buckwheat puffs and cereal.
Press firmly into a lined baking tray and freeze whilst making the chocolate layer.
Melt chocolate and coconut oil in the microwave in 30s intervals.
Pour chocolate over base and freeze for an hour or until chocolate sets.
Slice and enjoy!
